Declan McGurk is widely considered a pivotal figure in bringing the historically important American Bar at the Savoy back to the forefront of the global bar industry.


In partnership with head bartenders Erik Lorincz (2010-2018) and Maxim Schulte (2018-2020), the Savoy’s American Bar won The World’s 50 Best Bars in 2017 during McGurk's tenure, and took two runner-up spots amid six top-ten finishes.


In recognition of his leadership and managerial qualities – particularly in terms of hospitality and staff development - Declan won Bar Manager of the Year at the Class Bar Awards in 2019.


Declan has now had a change of tack and took on the position of commercial Director at The Boatyard Distillery in Enniskillen, Northern Ireland.


Declan created this simple and delicious Hattiers Signature Cocktail, the Yachting Tot. A simple build cocktail that can be stirred even in the roughest of seas.




What you'll need…


50ml Hattiers Resolute Rum.

10ml Sweet Vermouth.

30ml Lemon.

20ml Rosemary infused honey water.

A splash of soda.


What to do…


Build Hattiers Egremont Rum, plus each component in an old fashioned glass.

Stir.

Garnish with a twist of orange.

Serve.
